Recipe:
Couscous Salad:
- Cooked (Chicken Broth) Pearl Couscous
- Zucchini (Diced) Al Dente
- Green Beans (Diced) Al Dente
- Chives
- Spring onions
- Pepper and Salt
- Concentrated Premium Dashi (Sens Gourmet)
Salmon Tartar:
- Fresh Salmon
- Black Sesam
- Chives
- Pepper
- Ponzu Platinum (Sens Gourmet)
Dashi Butter Sauce:
- 250 g Concentrated Premium Dashi (Sens Gourmet)
- 25 g Yamato Soy Sauce RAW
- 500 g Cream (35%)
- 250 g Butter
- 5 g Xanthan Instant (Toufood)
Heat all ingredients till 80°C and mix with a handblender for a foamy sauce.
