Recipe:

Couscous Salad:

  • Cooked (Chicken Broth) Pearl Couscous
  • Zucchini (Diced) Al Dente
  • Green Beans (Diced) Al Dente
  • Chives
  • Spring onions
  • Pepper and Salt
  • Concentrated Premium Dashi (Sens Gourmet)

Salmon Tartar:

  • Fresh Salmon
  • Black Sesam
  • Chives
  • Pepper
  • Ponzu Platinum (Sens Gourmet)

Dashi Butter Sauce:

  • 250 g Concentrated Premium Dashi (Sens Gourmet)
  • 25 g Yamato Soy Sauce RAW
  • 500 g Cream (35%)
  • 250 g Butter
  • 5 g Xanthan Instant (Toufood)

Heat all ingredients till 80°C and mix with a handblender for a foamy sauce.

Jordà Decoration: 

  • Green Herbs Crumble
  • Crispy Buckwheat
  • Crispy Chickpeas
